After a busy day with only minutes to prepare dinner, this recipe is so quick, easy and satisfying because of the delicious protein and fat. This easy canned tuna recipe requires no mayonnaise or yogurt.

I like to keep a stock of ingredients that I know that I will always have on hand. For instance, when I don’t need to replenish too many groceries in a certain week – I will buy some extra core items that I can use to for a meal or to add to a meal. One of these items is some canned albacore tuna!
This recipe is so easy. It comes together in about 10 minutes from start to finish. The longest part is giving enough time for the onions to get soft over medium high heat. I’m sure you can crank it up to high if you can’t wait though. Just watch out so you don’t burn them as this will give a bitter flavor.

ingredients
1/2 onion diced
1 celery stalk diced
1/2 tablespoon butter
salt
Black pepper
1 large can tuna
2 small avocados (the kind that come in a bag at Aldi) or 1 large avocado
Method
Sauté the onions and celery on medium high heat stirring often for 5 minutes or until onions get translucent.
Add salt and pepper.
Add in the can of tuna. Mix it in on the heat let it warm through.
Turn off the heat and mash in the avocado.
Combine it all together and serve on any kind of bread, crackers or wrap that you have available.
I served mine on pita bread.
